Classic Pork Empanada

I love celebrating the amazing women that made my life possible. We do this by cooking food from Colombia, like these Colombian pork empanadas.

It's hand-held goodness made with fried corn masa filled with pork, potatoes and spices!

wHY YOU'LL LOVE THIS

Ingredients 

– Bone-in pork loin rib chops – Water – Cumin  – Salt  – Green onions – Roma tomatoes

STEP 1

Boil potatoes until tender. Meanwhile, Sauté the tomatoes and green onions in the bacon fat over medium heat. This is your sofrito.

STEP 2

In a large bowl prepare your masa. Combine your cornmeal and reserved pork broth.

STEP 3

Work the masa until it is well incorporated then cover and allow to rest for 15 minutes.

STEP 4

Add salt, hot sauce and teaspoon of cumin. Add the pork to your tomatoes and green onions.

STEP 5

Once the pork has been well combined with the sofrito, gently fold in your cooked potatoes.
