Passion Fruit Cheesecake

This passion fruit cheesecake with coconut crust is delicious and tropical.

Passion fruit has a very tart and sweet flavor. It has citrus notes and at times can also be slightly sour.

Ingredients 

– Full fat cream cheese – Granulated sugar – Greek yogurt – Vanilla extract – Passionfruit puree

STEP 1

Make the crust by combining pulsed coconut biscuits and shredded coconut with melted butter. Press into a springform pan.

STEP 2

While the crust bakes, make the passion fruit cheesecake filling. Preheat oven to 325°F.

STEP 3

Place the wrapped springform pan inside a larger baking pan. To the second pan add about 1” of hot water.

STEP 4

After removing the cheesecake from the oven, let it cool completely, then chill in the fridge. Top it with your prepared passionfruit coulis.

Variation:

Swap the coconut cookies for graham cracker crumbs or your favorite digestive biscuits.
