Colombian-Style Red Beans Recipe

This recipe for Colombian Red Beans will give beans a rich and authentic dish in the fraction of the regular time.

Want this to be a vegan Colombian red bean dish? Simply omit the pork belly and adjust your salt according to taste.

Ingredients 

– Red ball beans  – Carrot – Tomatoes – Green Onion – Pork Belly

STEP 1

Drain your beans that have soaked overnight and place them into your Instant Pot.

STEP 2

To your Instant pot add water, bay leaves and pork belly.

STEP 3

Once the pressure releases completely, add your tomatoes, carrots, green onion, plantains, cumin, salt and pepper.

STEP 4

Set the Instant Pot to sauté and continue to cook (with the lid off) until the plantains are fork tender or about 15 minutes.

Garnish with fresh chopped tomatoes and green onions.
