Coquito Tres Leches Cake

This recipe combines two of my favorite things: Coquito and Tres Leches Cake.

The shredded coconut and coquito makes this cake is a coconut lover's dream!

WHY YOU'LL LOVE THIS

Ingredients:

– Sweetened Shredded Coconut – All purpose flour – Baking powder – Butter

STEP 1

Set oven to 325 degrees F and place rack in middle position. Grease and flour a 13-by-9 inch pan.

STEP 2

Place flour, baking powder and salt in a medium-size bowl, mix and set aside.

STEP 3

With an electric mixer, beat the eggs one by one on a medium speed, for about 1 minute until they're very fluffy.

STEP 4

Slowly add the sugar until incorporated. Reduce speed of mixer, and slowly add the melted butter and coconut oil, then the vanilla and finally the rum.

STEP 5

Keep the mixer running in low. Make sure the butter isn't too hot because it will flatten your batter.
