Cuban Carne Con Papa Meets Beef Bourguignon

This recipe is an amalgamation of Cuban Carne con Papa and Julia Child's Beef Bourguignon.

Cuban carne con papa is a comfort food my mom used to make. Then Beef Bourguignon gave me confidence in my ability to cook.

Ingredients 

– Bacon cut into lardons – Extra-virgin olive oil – Stewing beef  – Carrots sliced – White onion

STEP 1

Preheat oven to 450°F. Cook your bacon and once crisp remove with a slotted spoon and set aside.

STEP 2

Dry the beef with a few paper towels for better browning. Add the olive oil to the rendered bacon fat and in batches, sear the beef on all sides.

STEP 3

Add onions, carrots, garlic and mushrooms to the same Dutch oven you just cooked your meat and sauté for 3 minutes.

STEP 4

Add the bacon and beef back to the pot. Add chopped potatoes, season with 1 teaspoon coarse salt and  ground pepper.

STEP 5

Sprinkle with flour and toss once more. Place in the center of the oven for 4 minutes.
