Easy Rabo Encendido

Instead of waiting hours and hours for this amazing Rabo Encendido, I decided to make it in the Instant Pot.

Rabo Encendido is easy to make, great for meal-prepping.

WHY YOU'LL LOVE THIS

Ingredients 

– Oxtails – Red bell pepper – Green bell pepper – Onion – Tomato sauce

STEP 1

Trim excess fat from the oxtails. Sprinkle the complete seasoning and 1/2 tsp. of salt then marinate.

STEP 2

Place first your onions followed by your oxtails. Add more seasoning and the bell peppers. Then set for 1 hour and 20 minutes at low pressure.

STEP 3

Serve with white rice and enjoy!

Variations/Substitutions

Don't have an Instant Pot? You can use a pressure cooker or slow cooker instead.

Storage

Place your left over oxtail stew in an airtight container and keep in the refrigerator for up-to 4 days.
