Italian Pasta Fagioli

Sometimes called Pasta fazool, this soup is hearty, filling and comforting.

Serve it with some crusty bread or garlic toast and you've got an entire meal.

Ingredients 

– Crushed Calabrian Chili Peppers – Cream Cheese – Tomato Paste – Unsalted Butter – Rigatoni

STEP 1

Crumble an Italian sausage and cook, stirring until cooked through in a Dutch oven.

STEP 2

Add onions, carrots, and celery and saute over medium-high heat until tender.

STEP 3

Add beef broth, tomato paste, marinara, sugar, basil, oregano and thyme.

STEP 4

Bring to a boil then reduce heat to low, cover with lid and allow to simmer for about 10 minutes.

STEP 5

Add dry ditalini pasta, water, red kidney beans and cannellini beans to soup and cook on low until the pasta is al dente.
