Pumpkin Soup with Crispy Prosciutto

This rich pumpkin soup is topped with cream and crispy prosciutto.

Even though this is considered a "peasant dish," it is one of my go-to meals when I need comforting.

WHY YOU'LL LOVE THIS

Ingredients 

– Prosciutto – Butter  – Yellow onion – Chicken broth  – Pumpkin puree

STEP 1

In a skillet place one tablespoon of butter and set to medium-high heat. Once the butter has melted, place the prosciutto in it.

STEP 2

Once browned and crispy. remove prosciutto from the skillet and set aside.

STEP 3

In the same skillet, place your diced onions and garlic. Add the second tablespoon of butter to the onions and cook until translucent.

STEP 4

Once the onions have cooked through, place them in a medium sized soup pot.

STEP 5

Add the chicken broth, pumpkin puree, thyme, rosemary, sage, salt, back and red pepper.
