Lucky Charms Cookies

These chewy cookies are filled with white chocolate chips, cereal pieces and tasty marshmallow bits.

Ingredients

  • ½ cup stick salted butter
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract
  • 1 ½ cup all-purpose flour
  • 2 tablespoons instant vanilla pudding mix
  • ½ teaspoon baking powder
  • ½ teaspoon corn starch
  • ¼ teaspoon kosher salt
  • 1 cup white chocolate chips
  • 1 cup lucky charms cookies

Instructions

  • Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
  • Place room temperature butter into a stand mixer (or large bowl) along with the brown and granulated sugar. Beat to combine then add large egg and vanilla extract.
  • Add your dry ingredients next: All purpose flour, pudding mix, baking soda, corn starch, salt and white chocolate chips. Mix on low until just combined.
  • Fold in lucky charm's cereal
  • Place some additional white chocolate chips and lucky charms cereal on a plate.
  • Use a cookie scoop or ice cream scoop to scoop out the cookie balls
  • Grab your cookie dough ball and press it into the plate filled with white chocolate chips. Be sure to press all those chocolate chips and pieces of extra lucky charms marshmallows into the top and sides of the cookie.
  • Be sure not to press any chips/cereal onto the bottom of the cookie
  • Place the cookies on a parchment lined cookie sheet and place them in the freezer for 15 minutes to chill.
  • Once ready to bake, place the cookies on a parchment lined cookie sheet and space them atleast 2 and a half inches apart.
  • Bake them for 13-15 minutes, carefully transfer them to a cooling rack once they come out of the oven. Allow the cookies to cool and enjoy.

Notes

Tip for these easy st. patrick’s day cookies

  • For the perfectly round cookie, the minute the cookies come out of oven, use the largest biscuit cutter you have or the opening of large round cup if the cookies are too big (anything round and wider than your cookies) Place the biscuit cutter over the cookies on the hot cookie sheet and move your hand in a circular motion for about 10 seconds. 

Variations and substitutions for these special marshmallow cookies

Don't like Lucky Charms? You can simply replace the Lucky charms with your favorite cereal. Cinnamon Toast Crunch, Fruit Loops or even Fruity Pebbles would be great alternatives.  
Don't like white chocolate chips? Use semi sweet chocolate chips or milk chocolate instead. You can also simply omit the chocolate all together. 
Don't have corn starch, use baking powder instead.

I'm a big fan of making a big batch of cookie dough and freezing the bulk of the dough in order to have a warm freshly baked delicious treat whenever I want. This is my process for freezing cookie dough:
  1. Using your ice cream scoop, scoop out your cookie dough onto a parchment lined cookie sheet.
  2. Chill the scooped cookie dough balls in the freezer for 20 minutes.
  3. Remove the cookie dough from the freezer and place the cold cookie dough balls into a freezer safe zip-top bag.
  4. Place the freeze cookie dough for up to 2 months.
  5. Right before baking add the m and m's
  6. When it’s time to bake the cookies, bake them for 2-3 minutes longer since the dough is frozen.

To store your baked St Patrick's day themed cookies, place them in an airtight container. This sweet treat will keep at room temperature for upto 3 days.
