Chimichurri Aioli

This Chimichurri Aioli sauce is one of my go-to dipping sauces for fried yuca and as a spread on sandwiches.

This can be made ahead of time and is ready in less than 5 minutes!

Ingredients 

– Flat leaf parsley – Cilantro – Lime – Garlic cloves – Red Wine Vinegar – Salt

STEP 1

In a food processor, place the parsley, cilantro, garlic, lime juice, vinegar, salt, pepper, olive oil and oregano.

STEP 2

Pulse the items in the food processor until everything has been well combined.

STEP 3

In a medium bowl, place your freshly made chimichurri and the mayonnaise.

STEP 4

Fold it all together until it’s a delicious light green aioli. Then cover it up and place it in the fridge until ready to serve.

variation

Want some extra heat in your chimichurri aioli? Throw in a jalapeño into the food processor along with the herbs.
