I've become obsessed with this Cilantro Lime Garlic sauce since I started down the black hole that is the keto diet. This is my coptcat version of Pollo Tropical's cilantro lime sauce.
Now the concoction I came up with comes out to be a thicker consistency than what you'd find at local fast food restaurants. This sauce ends up being more of a dip, but I find myself slathering it on just about everything.
French fries, grilled chicken, sandwiches, steak, arepas, salads, my toddler… you name it and I'm drenching it with this cilantro lime garlic sauce. It is so damn addictive. How do I know this recipe is good? Well my toddler loves it and it's the only way I can get him to eat raw veggie sticks.
THIS RECIPE IS PICKY TODDLER APPROVED. Granted, my toddler has been known to pick up random things off the floor and put them in his mouth…. but he is willingly ingesting raw vegetables thanks to this cilantro lime garlic sauce. So as far as I see it, this recipe is a win.
Cilantro Lime Sauce Recipe Ingredients
To make this cilantro garlic lime sauce you need this:
- fresh cilantro
- lime juice
- sour cream
- garlic cloves
- mayonnaise
- garlic powder
- sea salt
- black pepper
- cayenne powder
Equipment needed
All you will need is an 8 cup food processor.
How to make Cilantro Garlic Sauce
- Start by cutting your lime in half and adding the juice to your food processor.
3. Then add your cilantro, garlic and spices to your food processor.
5. Pulse your food processor until the cilantro and garlic are minced.
7. Then add the mayonnaise and sour cream.
9. Pulse again until well combined and serve immediately.
Cilantro Garlic Sauce Recipe variations
If you're looking for a vegan option to this cilantro garlic lime sauce, simply swap out the mayonnaise and sour cream for their vegan counterparts.
If you love this sauce but aren't a big cilantro fan, feel free to use less cilantro.

Ingredients
- ¾ Of a bunch of cilantro rinsed and stems removed
- Juice from 1 lime
- ⅔ Cup of sour cream
- ⅓ Cup of mayonnaise
- 1 Teaspoon of garlic powder
- ¼ Teaspoon of sea salt
- Pinch of black pepper
- Pinch of cayenne powder
Instructions
- Place the cilantro and juice in a food processor and pulse until the cilantro is completely minced.
- Add the garlic, salt, black pepper, cayenne to the processor and pulse to get everything incorporated.
- Lastly, add the sour cream and mayonnaise to the processor and pulse until smooth and creamy.
