What is ropa vieja?
Cuban ropa vieja is a classic Cuban dish made with slow-cooked shredded beef simmered in a rich tomato-based sauce with onions, bell peppers, garlic, and warm spices.
The name ropa vieja means “old clothes” in Spanish, which refers to the way the beef is shredded into thin strands that look like fabric. Despite the funny name, it’s one of the most beloved comfort foods in Cuban cuisine.

- Ropa Vieja- I use my dad's amazing ropa vieja recipe that i've adjusted to be made in the instant pot
- Hawaiian rolls- I love the sloghtly sweet flavor they have and i love the mild contrast it offers the shredded beef. I used a pack of King's Hawaiian Rolls.
- Cheese- It's not a slider if there's no cheese, in my opinion! For these I love mozzarella or swiss cheese, but you can also use Havarti, Provolone or even Monterrey Jack.
How to make these cuban ropa vieja sandwiches
- Place your cooked ropa vieja into a fine mesh strainer and strain the excess liquid from the meat onto a bowl. This will help avoid having soggy bread buns.


- Slice your Hawaiian rolls carefully in half.
- On the bottom roll, add your strained Ropa Vieja.


- Over the Ropa Vieja, layer on your cheese of choice. Place the top half of the rolls over the cheese.

- Melt the butter in a microwave safe bowl and add the sazon completa, then mix to combine.
- Brush the sazon completa butter over the top of the rolls.

- Bake for 10 minutes and then serve immediately.
